Fabulous festive eggnog recipe

We all love something a bit special at this time of year and what can be more special than delicious home made eggnog. Think of it as a boozy custard drink that you can tailor to your own tastes – your guests will keep coming back for more!

 

Serves 8

Ingredients:

  • 700ml whole milk
  • 250ml double cream
  • 3 cinnamon sticks
  • 1 vanilla pod, split with seeds removed
  • 1 tsp grated nutmeg
  • 5 eggs, separated
  • 130g granulated sugar
  • 175ml rum, or bourbon

 

Method:

Combine the milk, cream, cinnamon, vanilla (pod and seeds), and nutmeg in a saucepan and bring to the boil over a medium heat. Once boiling, remove from the heat and place to one side and allow those Christmassy flavours to infuse the milk and cream mix.

In a large bowl beat together the egg yolks and sugar until it thickens and becomes pale in colour. Gradually whisk in the infused milk (having removed the cinnamon sticks and vanilla pod) and continue to mix until you have a smooth consistency. Now to add your spirit of choice. Typically this is made with run, bourbon or brandy but it also works really nicely with amaretto or an apple brandy. Give the mix a good stir and refrigerate for up to 3 days.

When your guests arrive all you need to do is beat the egg whites until you get soft peaks. Gently fold the whites into the eggnog until well combined. Now you are ready to serve. Pour into your favourite glasses and garnish with a little grated nutmeg and if you have kept your cinnamon sticks you can add those as well for one final classy flourish!
